Italian Sausage Sandwiches with Peppers and Onions

Italian sausage sandwiches are built around a substantial sausage and a substantial roll. The familiar pepper-and-onion version works because sweetness, acidity and bread balance the rich sausage.

Choose mild, hot or mixed sausage

Mild and hot Italian sausage differ mainly in seasoning. For a group, offering both can be more useful than trying to make one version suit everyone. Confirm whether the links are raw or fully cooked.

Cook sausage and vegetables thoughtfully

Peppers and onions need enough time to soften and brown, while raw sausage needs safe cooking through the centre. Cooking them separately and combining near the end gives more control over texture and doneness.

Sauce and cheese are optional

Marinara and melted provolone or mozzarella make a heavier sandwich. For a cleaner sausage-and-peppers version, use no sauce or only a spoonful. Giardiniera or pickled peppers can add acidity without extra moisture.

Assembly order

  • Toast or warm the roll so it resists moisture.
  • Add a thin layer of sauce, if using.
  • Set the sausage into the roll.
  • Pile peppers and onions along the sides.
  • Add cheese briefly under heat, if desired.
