Bun families
| Bread | Best use | Preparation |
|---|---|---|
| Soft standard bun | Classic dogs | Steam briefly |
| Potato or brioche-style | Rich dogs and wet toppings | Toast interior |
| Poppy-seed bun | Chicago-style builds | Steam gently |
| Split-top roll | Griddled sides | Toast flat sides |
| Pretzel-style or brat roll | Bratwurst | Warm or toast |
| Sub roll | Italian sausage | Toast cut face |
Length, width and hinge
The sausage should fill most of the bun length without making the first and last bites all meat. A strong hinge prevents toppings from escaping.
Moisture management
Use cheese or mustard as a barrier, drain sauerkraut and spoon chili narrowly. Toasting helps, but over-toasting makes a bun crack.
