Chorizo, Andouille and Merguez Sausages on Buns

Strongly seasoned sausages can make excellent sandwiches, but they need different accompaniments from a mild frank. The best build usually adds freshness, acidity or cooling contrast.

Chorizo-style sausage buns

Fresh chorizo-style links can pair with grilled onions, peppers, avocado, salsa or a lime-forward slaw. Because products vary widely, follow the package handling instructions and do not assume a cured chorizo and a raw grilling sausage are interchangeable.

Andouille-style sausage buns

Smoky andouille works with mustard, pickled vegetables, onion relish or a restrained remoulade-style sauce. A crusty roll can stand up to the dense sausage and wet toppings.

Merguez-style sausage buns

Merguez is often rich in warm spices and heat. Cucumber, herbs, yogurt-style sauce, pickled onion or a tomato salad can provide balance. Confirm ingredients because lamb, beef and mixed-meat versions are sold.

Keep the sandwich coherent

  • Use one primary sauce, not several competing sauces.
  • Add a crisp or acidic element.
  • Choose bread sturdy enough for the sausage.
  • Let the sausage seasoning remain recognizable.
