Method comparison
| Method | Strength | Main risk |
|---|---|---|
| Grill | Smoke and browning | Can split or scorch |
| Steam | Moist texture and batch service | Little browning; wet buns |
| Gentle simmer | Even reheating | Hard boiling dulls texture |
| Pan or griddle | Good browning and control | Needs turning |
| Air fryer | Fast browning in small batches | Easy to dry |
| Oven | Useful for larger batches | Less direct browning |
A two-stage method
For a casing dog or thick sausage, gentle heating followed by a short high-heat finish can give a hot center and browned exterior.
Do not cook by clock alone
Package size, starting temperature and equipment differ. For raw sausages, verify the required safe internal temperature with a food thermometer.
Prepare the bun separately
Warm or toast the bread at the end so it reaches the table warm and dry.
